Butter Chicken
THE BASIC (Keep this in mind while cooking)
Butter chicken is cooking the marinated chicken in tomatoe sauce. If this marinated chicken
is roasted its Chikken tikka. The sauce is important in this.
Cashew, U can skip if u want to. But if u add, it takes away the sour and hotness from dish which is good.
to serve 3 TO 4 mallus
MARINATING
Chicken breast fillets no skin -750 gms
Garam Masala -2 tsps
Chilly Powder -2 tsps
Turmeric Powder -1 tsps
Crushe Garlic - 2 tsps
Crushed Ginger - 2 tsps
Lime Juice - 2 tsps
Cinnamon - 1/4 tsps
Yoghurt (natural) -300gms
Butter -25gms
cashew(crused) -1/4 cup (U can try with out this)
salt -I dont know
--Wash Cut Chicken breast fillets into size u like(it should look like cubes).
--Drain water from chicken and add all the ingrediants mentioned above.
--Mix in a big bowl by lifting the chicken gently in the bowl,DONT try to
squash chicken, use ur fingers lift and mix it well.
--Taste the mix and add salt till ur happy.(be on safer side)
--Place the mix in freezer.(30 minutes).
THE SAUCE
Tomatoes - 5
Butter - 25gms
--Cut tomatoes into small pieces and crush it with hand in a big bowl till u feel
the skin of tomatoes.
--Take a deep pan ,medium hot , put butter wait till it melts
--Add tomatoes and cook for five minutes and keep stirring.
--Try smash tomatoes and mix well while stirring.
--keep it aside when ready.
THE MIXING
Full Cream - 1/4 cup (not really required for kerala version
Onion - 1
Sunflower oil - dont know(to make onion brown)
--deep pan, good heat, put oil then onion, soft stir, put salt(this gives onion
good color)
--stir until its well done.
--Add the marinated chicken and stir soft,(5minutes)
--Add tomato sauce we made.
--Turn to simmer and cook for 15-20mts. DONOT OVER COOK CHICKEN. KEEP
STIRRING
--Taste and add salt
--Add cream
STYLING (Dont Worry about this)
Coriander leaves
bay leaves.
--Move the dish from pan to a bowl and put thinly cut coriander and bay leaves
on top
--Do not Add this when the dish is getting cooked.
Serve With POROTTA, CHAPPATHI NOT WITH RICE.
