Chicken manjurian



Ingredients
Chicken - 1/2 kg(Boneless, preferably breast meat)
Corn flour - 150 gm
Red chilly powder - 2 tbsp
Turmeric powder - 1/2 tbsp
Coriander powder - 2 tbsp
Onion(medium) - 3 nos(finely chopped)
Green chillies(split) - 4 nos
Garlic paste - 1 tsp
or cut into small pieces
Ginger paste - 1 tsp
or cut into small pieces
Black pepper(crushed) - 1 tsp
Olive oil
Soya Sauce(Black) - 2-3 tsp
Salt - As reqd

Method
1)Cut the chicken into small sized pieces.

2)Mix it well with chilly, turmeric andcoriander powder and salt.

3)Add the corn flour and mix well with enough water.

4)Keep the mixture on the freezer for 1/2 hour.

5)Heat oil in a frying pan.

6)Add onions and fry, till it becomes light brown.

7)Add enough salt, green chillies, black pepper, ginger and garlic and fry.

8)Add 2 tsp of soya sauce and keep on low flame.

9)Once the chicken mix is settled, fry the mix in oil, in a separate pan, until
the chicken is cooked well.

10)Transfer the mix with the oil to the onion - soya mix and add extra sauce, if needed.

11)Keep on a low flame and cook for 10 minutes.

12)Add coriander leaves, just before switching off.

13)Decorate with extra coriander leaves, once the dish is transferred to the serving bowl.

Serve hot with chappathis.

Chicken Kabab




INGREDIENTS
Chicken - 1 kg
Kabab Masala Powder - 2 tsp
Chilly Powder - 3/4 tsp
Turmeric Powder - 1/2 tsp
Pepper Powder - 1/2 tsp
Egg - 1 no
Salt - To taste (approx 1 tsp)
Vinegar - 3 tsp

METHOD
1. Clean the chicken (cut into small pieces) and drain the water in it.

2. Mix the ingredients 2 to 7 and add the chicken pieces to this and mix well

3. Marinate this atleast for 2-3 hours.

4. Heat oil in a pan and fry the pieces

Chicken Curry in 10 mins



Preparation time 10 ins.

Ingradients:
Chicken: Half KG.
Big Onion: Half Kg.
Ginger& gallic paste: 50 gm.
Tomoto: 2 large
Green chilli: 6 no's
chicken masal: 2 tb spoon
red chilli powder: 1 tb spoon
turmaric powder: 1 tb spoon
pepper powder: 1 tb spoon
salt: to taste
puthina leaves:little

Curry leaves: little
METHOD
Wash the chicken well. add one spoon turmeric power and salt. Cook it in a cooker.. for three min.
Make the onior and 4 green chilli as a good paste.
Keep the pan on stove, add little oil, fry the tomoto pieces and green chilli. .add the onoion, ginger/garlic paste and add the powder (chilli, chickemn masala, pepper)..make it a good gravi..add the cooked chiken.. and the leaves( curry and puthina).. boil it for 2 min...The Chicken cury is ready to eat with chappathi, rotty or pulavu.

Chicken in Roasted Coconut





INGREDIENS

Chicken 11/2 Kg.
Coconut 1 (big one)
Chilli Powder 11/2 Tablespoons
Coriander Powder 1 Teaspoon
Garam Masala 1 Teaspoon
Aniseed ½ Teaspoon
Garlic 1 Pod
Ginger 1 Piece
Curry leaves 2 Sprigs
Ghee 2 Table spoon
Salt To taste

METHOD

Clean the chicken. Take out most of the meat from the bones Cut into one and a half inch pieces. Chop left over bones with flesh into small pieces. Keep aside to drain out all the water. Roast coconut scraping/ grated till golden brown. Grind to a fine paste without using water.

Roast chilli powder, coriander powder and aniseed lightly, grind with ginger and garlic. Mix all the ground masala with enough salt. Rub into meat nicely and keep aside for ½ an hour.
Take a thick bottomed vessel. Put 2 teaspoons of ghee in the pot. Pack the marinated chicken over ghee. Close the vessel cook on a fairly good flame. When it starts boiling, lower the flame to minimum, turn the contents once or twice. Cook till the water evaporates, oil separates and chicken gets roasted in that oil. Stir only to prevent burning. Remove from fire and serve hot with chapathi or rice.
