Ingredients
Malabar Porotta (cooked,frozen) – 6
Eggs – 4
Large Onion – 1 sliced lenthwise.
Green Chilli (small spicy ones) sliced lengthwise – 4
Tomatoes diced – 1 large or 2 small
Turmeric powder - 1 teaspoon
Chilly Powder – 1 teaspoon
Dhania powder (fried and powdered) – 1 Tablespoon
Ginger – ½ inch finely chopped or paste
Curry leaves - a few
Salt to taste
Cooking oil – 2 tablespoons
Preparation
• Pour 2 tablespoons oil into a pan on medium flame, add onions and fry till slightly brown.• Put the turmeric powder, green chilly, ginger, and curry leaves and stir for 2-3 minutes
• Add tomatoes, chilli powder, dhania powder and cook until tomatoes become a paste.
• Thaw the porottas in a microwave. Tear them up into small pieces and add to the mixture. Mix well.
• Reduce flame, break 4 eggs and mix well with the porottas.
• Keep on medium flame and stir continuously until eggs are well done.
