Mushroom Theeyal

Ingredients

1. Mushroom - 250 g
2. Coconut powder -3/4 cup
3. Shallot finely chopped-1/4 cup
4. Garlic -2
5. Coriander powder - 2 tsp
6. Chilli powder -1 tsp
7. Turmeric powder -1/4 tsp
8. Pepper powder -1/4 tsp
9. Mustard -1/4 tsp
10.Tamarind extract
11. Fenugreek seeds, cumin & mustard a pinch each.
12.Curry leaf, shallot and mustard for seasoning.

Preparation

• Pour 1 teaspoon full of oil into a hot pan.
• To it add coconut powder, finely chopped shallot, garlic and the ingredients in 11.
• Cook till light brown in color.
• Then add all the powders to it.
• Grind the mixture using very little water.
• To another hot pan, add oil and when it gets hot add mustard.
• Then add finely chopped shallot.
• Add mushroom which was pretreated with salt water.Add salt to taste.
• After mushroom is cooked properly, add tamarind extract.
• Also add the finely ground mixture.
• Add enough water and allow to boil.
• Serve it hot.

Mushroom Manchurian



Ingredients

Mushroom-250gm

Big onion-1 diced

Green Chilly-4(slits)

Soya Sauce-4tbsp

Pepper powder-2tsp

Ginger-1piece(chopped)

Chilly Sauce-1tsp

Tomato sauce-1tbsp

Salt

For batter

Maida-5tbsp

Corn flour-2tbsp

Pepper powder-1tsp

Soya sauce-1tsp

Ginger-garlic paste-2tsp

Water-1/4cup

Salt-to taste

Method

Mix all the ingredients and make a thick batter.Add the mushrooms(chop one mushroom to 4 pieces) and mix well ..

Heat oil in a pan and shallow fry them until it become light golden colour.

Drain the fried mushrooms and keep aside

Heat 2tsp of oil and saute onion till translucent .

Add ginger and green chilly

Saute for 2 minutes

Add the fried mushrooms ,3tbsp of soya sauce,2tsp of pepper powder ,chilly sauce and stir well ..

Cook the mushrooms for another 15 minutes in a low flame by covering the pan

Stir again and remove from the fire .Then add 1Tbsp of soya sauce and tomato sauce .Check the salt

.Cover it and let it set for another 30 minutes.

Transfer to a serving bowl.Decorate with Green chilly .

Serve hot with bread,chapty,fried rice etc



Tomato Chutney



Ingredients


Onion-2 medium(sliced)

Dry Red chilly(vattal mulaku)-4

Tomato-4(chopped)

Salt – to taste

Ginger-very small piece

Curry leaves-1string

Coconut oil-5tsp


Method

Heat 2tbsp of oil in a pan and fry red chilly.Keep them aside .

In the same oil saute onion,ginger and curry leaves till it become translucent.Keep that also aside .

Now saute chopped tomato .Cook in a low flame by closing the pan for few minutes .When done allow the cooked tomato to reach room temperature . .. If possible remove the skin from them .

When cool grind the red chilly,tomato ,salt and onion mix together to a fine paste..

In the same pan heat 1 tsp of oil and saute this paste for 3 minutes (opt).So the tasty tomato chutney is ready to serve ..Serve with dosa,idly etc ..






Mango Shake



Ingredients


Ripe Mango(Alphonsa)-3

Sugar-3tbsp

Milk-2cup

Ice cubes-

Method


Peel and cut the mango into small pieces.Pour it in a blender.Blend well.Then add milk and sugar .If u r using cold milk no need to add ice ..Other wise add ice too..Grind well once again ..Transfer into a serving glass and serve chill.U can increase the amount of milk if u want the shake to be loose in consistency .Same with the amount of sugar also ..

Banana fry


Ingredients

Riped banana-2

Ghee-For frying

Sugar-2Tbsp

Method

Cut the banana into small pieces …Heat ghee in a pan ..Then fry the banana till it become golden brown colour ..Turn it and fry the other side also …When it ready sprinkle the sugar into the top of the banana…..Transfer into a serving plate ..Serve hot..
